A few months ago we had a bad experience with meatloaf. Let's just say I don't want to even see meatloaf on my plate for another few years! But this pie sounded so delicious we had to give it a try. I'm so glad we did. Don't be stressed about the pie shell. I'll post my pie crust recipe and let me tell you it is as simple as you can get! Which is good because I can't roll out a pretty shaped pie shell to save my life.
1 lb ground beef
1 chopped onion
1 egg
1 Tbsp ketchup
1 Tbsp worcestershire sauce (Lea & Perrins is soy free)
1 can whole kernel corn
1 unbaked pie crust (see my pie crust recipe)
2 cups mashed potatoes
1/2 c shredded cheddar cheese
Preheat oven to 350*
Brown ground beef and onion and season with garlic and season salt. Drain and allow to cool slightly.
Mix in egg, ketchup, and worcestershire sauce. Spread in bottom of pie crust.
Next layer the corn, mashed potatoes, and top with cheddar cheese.
Bake for 30 minutes or until cheese is bubbly.
Summer all year!
